Content and formatting are so intertwined that you cannot update your CV without breaking the formatting.

Online CV generators are not customizable enough, and they are not CV-maintaining tools.
They are not suitable for the professional setting, and it's difficult to reproduce the same CV years later.

Overleaf is good, but it is not a CV tool.
Overleaf is a general-purpose $\LaTeX$ editor. There is always a trade-off between generality and the user experience when creating a very specific document (a CV).

We cannot access or edit our CVs from our phones.
The only option is to get lost in our cloud drives while looking for the most recent PDF we used for an application a few months back.
There is a need for a robust, customizable, and professional cross-platform CV maintenance and version-control app. The open-source RenderCV lays the groundwork for creating such an app, which would allow professionals to manage their CVs on their phones and computers.

Templates
Our various CV templates are clean and professional, based on what has been used by academics and high-talent professions for a long time. Similar to Harvard, Columbia style CVs.
We honestly do not understand all the colorful and overly-complicated CV templates supplied by online CV generators. They actually hurt your applications instead of helping.
